Scottish Shortbread
Modified from Cookies Cookbook

3/4 cup all purpose flour

1/2 cup cornstarch
1/4 cup sugar, plus some extra for sprinkling
1/2 cup unsalted butter, chopped, room temperature (unsalted really DOES matter)
 
Preheat oven to 325. Sift flour, cornstarch, and sugar in a mixing bowl.  Rub butter into the flour mixture until it binds and you can knead it into a soft dough.  Put dough in mold or mold by hand.  Put on baking sheet.

Bake for 35-40 minutes or until pale golden in color.

Sprinkle with sugar and cool on baking sheet.  They taste best the NEXT day, not right after.
