Buttermilk Waffles

From the Tumey's

 

2 cups flour

2 tbsp sugar

2 1/2 tsp baking powder

3/4 tsp baking soda

1/2 tsp salt

1/8 tsp cinnamon

2 eggs

2 cups buttermilk (or 2 tbsp of lemon juice plus regular milk to make 2 cups)

1/2 cup oil

 

Whisk the dry ingredients together (so through the cinnamon).  Add in wet ingredients and mix until just combined (never over mix waffle or pancake batter - remember you will never get all the lumps out and shouldn't try).  Spoon some of mixture into heated waffle iron.  Repeat as necessary. 

 

Serves 4.  [I would say it serves more than that.]
