Zucchini Lasagna
 
3 cans of tomato sauce
green pepper, diced
onion, diced
4 oz mushrooms, diced
2 cloves garlic
1 tsp basil
1 tsp oregano
1 tsp Italian seasonings
1 tsp parsley
2 oz Parmesan cheese
salt and pepper to taste (okay, all the above are approximations as I never actually measure)
4 cups zucchini (or you can do 2 cups zucchini and 4 lasagna noodles..I rather like that combination), sliced
1 container cottage cheese
8 oz mozzarella cheese
8 oz cheddar cheese

In a sauce pan, warm tomato sauce.  Add all the vegetables and spices.  Taste to make sure the seasonings are right.

Layer the lasagna into the pan.  First put down a layer of zucchini (or zucchini and noodles), then cover in 1/2 the sauce. Then put down 1/2 of the cottage cheese, then 1/2 of the mozzarella and cheddar cheese.  Then another layer of zucchini, rest of cottage cheese and other cheeses.

Bake at 350 for 2 hours.
