Bacon Chicken Alfredo
Modified from Quick Cooking

1 pkg (16 oz) fettuccine (or spaghetti)
1 lb sliced bacon, diced
1 1/4 lb boneless, skinless chicken breasts, cubed
1/4 tsp salt
1/4 tsp pepper
1 jar (16 oz) prepared Alfredo sauce (or you can make your own, but actually I just used the store brand and it was great, and really easy)
1 pkg (10 oz) frozen chopped spinach, thawed and squeezed dry (we both hate this, so we didn't use it,  but it you like spinach go right ahead and just it)
1/2 tsp Italian seasoning
1/4 cup grated Parmesan cheese

Cook pasta according to package directions.  Meanwhile, in large skillet, cook bacon over medium heat until crisp.  Then transfer to paper towels using a slotted spoon so bacon can drain.  Keep 3 tbsp (so a little bit) of drippings, discard rest. Sprinkle chicken with salt and pepper and cook in drippings until done. over medium heat.  Drain pasta, stir into skilled (actually I used the spaghetti pot, which is bigger and I'm less likely to make a mess in).  Add Alfredo sauce, spinach (or not), Italian seasoning, and bacon.  Cook and stir until heated through.  Sprinkle with Parmesan cheese.

Makes 6-8 servings.
