Grilled Chicken Club Pitas

Modified from Cooking for 2

4.5 tbsp honey

4.5 tbsp spicy brown mustard

1/4 tbsp garlic seasoning blend (salt-free if you like)

2 boneless skinless chicken breast halves (5 oz each)

2 whole pita breads

1/2 cup shredded lettuce (optional)

1 bacon strips, cooked and crumbled

2 slices Swiss cheese

In a large bowl, combine honey, mustard and seasoning blend.  Set aside 3 tbsp.  Brush remaining mixture over chicken.  Place in storage container and refrigerate for at least an hour.  Refrigerate reserved mixture until serving. 

Grill chicken, covered, over medium heat or broil 4 inches from the heat for 5-7 minutes on each side or until juices run clear. Cut chicken into 1-inch strips.

Spread reserved marinade (I didn't do this - we added as we wanted) over pita breads.  Top with lettuce (I didn't use this), chicken, bacon and cheese.  Now I then microwaved a little because I like my cheese melted. 

Serves 2.
