This is a collection of my favorite
recipes. Some of them are American favorites, and some are from far away
lands.
- Bessaboussa:
This is a recipe I compiled from
various recipes collected from the internet. I've had many compliments
on it and think it will be a wonderful addition to your collection. I
first tasted this delicious cake in the late 80's. A friend from the
UAE had made it for me and though I had taken it with me in the car to the
MEPS processing station on my enlistment day, I regret I never had a chance
to have more than one piece as I forgot it in the car when my mother dropped
me off.
- Konafa:
These are a few recipes for three varieties of Konafa. I can vouch for
the first one, which I've seen most commonly. And the second one made
with heavy cream is delicious. My next task is to try the third one
made with Mozarella. They are all very good and easy to make.
Note: I use kitchen shears to cut the Kataifa (Konafa) into a bowl in
1-3 inch pieces. I then mix the boiling butter with the konafa before
putting the first half in the bottom of the pan. Also, no margarine,
no salted butter; only unsalted butter in these recipes.
- Biscotti:
My husband loves these. I have not had any luck finding anise oil, so
I included the modification to this recipe which I use instead. If you
make the recipe plain (no nuts or seeds), they are also good teething
biscuits for children.
- Zucchini
Bread: This is a recipe I
got from a friend. I made some minor mods, but it is by far the best
zucchini bread recipe I've found and very easy as well.
