Sweet
Potato Pie
5 Large sweet potatoes
¼ cup orange juice
1 stick salted butter melted
2 teaspoons cinnamon
1 teaspoon nutmeg
1 ½ cups mini marshmallows
Bake the potatoes in a 375 degree
oven for about 40 minutes until they are soft.
Remove the sweet potatoes from the oven and allow them to cool.
Puree the potatoes and place them in a casserole dish.
Add the orange juice, cinnamon, nutmeg, and melted butter.
Blend well and season to taste. Place
in a 350 degree oven for 20 minutes. Remove
from the oven and spread mini marshmallows evenly on top.
Bake for approximately 5 minutes until the marshmallows are golden brown.
Serve warm with whip cream and sprinkles of nutmeg and cinnamon on top
for a yummy treat.
Lavender
cookies
2 eggs
½ cup margarine
1 cup sugar
1 teaspoon lavender leaves
1 ½ cups flour
2 teaspoon baking powder
½ teaspoon salt
confectioner’s sugar
rosewater
Preheat the oven to 375 degrees. Put eggs, margarine, sugar and lavender into blender and run
on low until well mixed. Sift flour
baking powder and slat into a mixing bowl.
Add other ingredients and stir until well blended.
Drop dough a teaspoon at a time onto ungreased cookie sheets.
Bake until lightly browned. Blend
enough rosewater into the confectioners sugar to make a smooth frosting.
Use this as a icing for your
cookies spread on the cookies when they are cool and let the frosting set until
firm. Enjoy!!!!!!!!
Pumpkin
Bread Pudding
6 cups crumbled dry bread
½ cups chopped nuts (of your choice)
3 eggs beaten
1 14oz. can condensed milk
1 can pumpkin
¼ teaspoon ginger
1 teaspoon nutmeg
1 teaspoon cinnamon
2 cups milk
¼ cup butter, melted
1 teaspoon vanilla
1 teaspoon rum extract
¼ cup rum (optional) may substitute spiced cider
Preheat oven to 350 degrees. Mix bread crumbs and nuts together. Place in the bottom of a lightly greased 9x9 pan. Beat eggs, condensed milk, pumpkin, ginger, nutmeg, and cinnamon in a medium-sized mixing bowel. Stir in the milk, butter, vanilla, rum extract, and rum. (or substitute spiced cider) Pour over the bread crumbs. Bake until knife inserted in the center comes clean, about 1 hour. Top with whip cream nutmeg or cinnamon.
