Dried Orange, Lemon or Lime Peel
Peel wide strips with vegetable peeler from fruit. Do not get any of white.
Bring a small pot of water to boil. Dump in strips. Blanch about five minutes or until soft and getting gooey. Remove with slotted spoon to plate. Dip each strip in sugar and get covered on both sides. Let dry on wax or parchment paper. Can be dipped halfway in melted chocolate -- dark chocolate for orange peels, white chocolate for lime peels.
