25 minutes plus 2 hours' marinating

 2/3 cup Dijon mustard
2 garlic cloves, peeled, crushed and chopped
12 bay leaves
3 tablespoons extra virgin olive oil
1 teaspoon coarsely ground black pepper
4 steaks
Sea salt.

1. In a wide, shallow dish, stir together the mustard, garlic, bay leaves, olive oil and pepper. Place steaks in dish, and smear mustard mixture on both sides of each steak. Cover with plastic wrap and refrigerate for 2 hours.

2. Heat a broiler. Season steaks on both sides with salt, and place on a broiling pan. Broil to taste, about 8 minutes on each side for rare, about 10 minutes a side for medium-rare. Serve hot.
