Pierogi

Ingredients:

Potatoes*
Chopped Up Onions (to taste)
2 Cups Flour
1 Egg
1/2 Tsp. Salt
3 Tbs. to 1/4 Cup Water
Recipe:
Boil
potatoes for approximately 30 minutes (until soft).
Fry up a
few chopped onions in butter (until onions are a golden-brown).
Mash potatoes (add butter and milk before mashing).
Add onions
with butter to mashed potatoes.
Mix
flour, egg, salt, and water in a bowl (by hand) until
mixture
forms a ball. Knead briefly on a floured surface. Roll
into a
log, then slice into 1" pieces.
Roll
each piece into a ball in your hand, then roll out a
flat
circle. Place about 1 tbs. mashed potato filling in
the center.
Fold over and crimp edges shut.
Cook
in boiling water until they float to the top (about
3-5
minutes). Serve with melted butter.
*Can
substitute other fillings, such as cabbage, cheese,
mushrooms, fruit, etc., in place of potatos.
