Colorful Lemon Couscous


Vegetable oil spray
1 small green bell pepper, chopped
1 small red or yellow bell pepper, chopped
1 teaspoon garlic, bottled and minced
1 cup low-sodium chicken broth
1/4 teaspoon salt
1 cup couscous
1 teaspoon finely shredded lemon peel
1 tablespoon lemon juice

Spray a medium saucepan with vegetable oil. Place over medium high heat. Add bell peppers and garlic. Cook until tender, about 5 minutes. Stir in broth and salt. Bring to a boil over high heat. Add remaining ingredients, stir and remove from heat. Cover and let stand 5 minutes or until liquid is absorbed.

Serves 4: 3/4 cups per serving

Standing time: 5 minutes
