FILLET OF BEEF WITH GREEN SAUCE

	Ingredients:
	
	2 x 350 - 500g short beef fillets or
	  1 whole long fillet
	30g (1oz) butter
	2 tbsp. brandy


	- Green Sauce - 

	1/2 bunch fresh parsley, chopped
	6 small gherkin pickles
	2 tbsp. canned green peppercorns, drained
	1 tbsp. drained capers
	4 canned anchovy fillets, drained
	2-3 tsp. finely grated lemon rind
	4 tbsp. olive oil


	Cooking Directions:

	1. Preheat oven to 200C (400F).  Trim fillets and tie into neat
	   shapes.  Melt butter in a flame proof baking dish over
	   moderate heat and sear beef on all sides.  Warm brandy,
	   ignite and pour over beef.  Shake dish until flames subside.
	   Spoon juices over meat and bake for 15-20 mins for rare to
	   medium-rare beef cook.

	2. To make sauce, place parsley, gherkin pickles, peppercorns,
	   capers, anchovies and lemon rind in a food processor or
	   blender and puree'.  With motor running, gradually add oil
	   until blended and smooth.

	3. To serve, slice beef, arrange on a serving dish and spoon
	   over sauce.
