TIRAMISU

	Ingredients:
	
	5 eggs, separated
	75g (2 1/2oz) caster sugar
	500g (1lb) mascarpone cheese
	1-3 tbsp. rum
	250ml (8oz) strong black coffee
	250g (8oz) sponge fingers
	75g (2 1/2oz) cocoa powder, sifted
	60g (2oz) dark chocolate, grated
	155g (5oz) raspberries or strawberries


	Cooking Directions:

	1. Place egg yolks and sugar in a large bowl and beat until
	   very thick and pale.  Add mascaporne cheese and rum to
	   taste and mix gently.  Beat egg whites to stiff peaks
	   and fold into mascaporne mixture.

	2. Brush sponge fingers with coffee and use to line the base
	   of a serving bowl.  Add one-quarter cheese mixture and
	   sprinkle with one-quarter cocoa.  Repeat using remaining
	   cheese mixture and cocoa to make four layers.  Decorate
	   with chocolate and berries.  Cover and refrigerate for 24
	   hours.
