BREAD & BUTTER PUDDING

Meant as a dessert, but good at any time. I like this for breakfast.

INGREDIENTS

10-12 slices white bread
4-6 oz softened butter
4 oz raisins
3 eggs
20 oz milk
3 oz sugar
Cinnamon and/or Nutmeg
Sprinkle brown sugar

PROCEDURE

Butter the bread and cut slices into quarters. Place along the edges and cover the bottom of a well buttered, oblong baking tray. (Ideal is a bread tray, about 10x4 by 3 inches deep).Add half the raisins, these can be soaked in rum or brandy if you like, spreading them along the layer. Add another layer of bread and the rest of the raisins. Cover this with a final layer of bread.
Beat the eggs in a large bowl, then add the milk and sugar to make a custard. Pour the custard mix over the bread. Sprinkle the top with a little brown sugar, cinnamon and/or nutmeg. Bake for 30 mins at 400f.
Will be cooked when brown on top, mixture will have risen and custard is set. Will serve 4.
