POTATOES - OVEN ROASTEDOld fashioned oven roasted potatoes, perfect with any roasted meat dish. Can be cooked in the pan with the meat, using the juices from the meat for basting. If you don't have room, simply place in an oven proof dish, with a little oil or butter, and for some extra flavour add a couple of slices of bacon.
PROCEDURE
Peel potatoes and cut into two or three pieces, depending on size. Boil in pan of water with a teaspoon of salt for around 5-10 minutes. This is to slightly soften the potatoes, so do not over boil. Place in the dish as described above. Will take around one and a half hours to cook at 325 degrees. Baste at least 3 times during roasting.
