Iris' Artichokes

        4-5 large artichokes
        1 pound bacon, cut-up-diced
        2 cans breadcrumbs
        1 stalk green onions
        1/2 can parmesan cheese
        2-3 tbsp oil lemon juice
        garlic, salt, pepper
        1-2 cups water

      Cut bottoms and clip leaves all around artichokes.
      Pound against countertop to open. Soak in salt
      water for 1 hour for 1 hour or more to soften.
      Mix all seasonings in large bowl with bacon, bread
      crumbs and 1-2 cups of water--mix well with hands.

      Stuff artichokes with dressing, place in large pot
      (could use turkey roaster), pour oil and lemon juice
      over each artichoke, add 2-3 cups of water in pot to
      effectively steam artichokes while cooking in oven at
      375 degrees for 2 hours. Can also cook on the stove
      over two burners.

      For casserole, use 3-4 jars of cut-up, marinated
      artichoke hearts and add to mixture in a large bowl.
      After mixing well, place in casserole dish and pour oil,
      lemon juice and water on top to keep moist. Bake in
      oven 1 1/2 hours.
