Indonesian Chicken Sate

        2 tbsp soy sauce
        1 tbsp sugar
        1 tbsp lemon juice
        1/4 tsp garlic powder
        1/8 tsp black pepper
        4 chicken breasts, skinned,
              boned and cut into 1-inch pieces
        2 tbsp vegetable oil

      Combine first five ingredients. Add chicken and coat.
      Marinate at room temperature for 30 minutes.
      Skewer pieces on wooden skewers and brush with
      oil. Broil 3 inches from heat,turning skewers
      for 5 minutes. Can also be stir-fried if you like.
      Serve with Spicy Peanut Sauce (below) over rice.
      Makes 4 servings or feeds two teenagers.

        Spicy Peanut Sauce

        1/4 cup chopped green onion
        2 tbsp vegetable oil
        2 cups water
        1/2 cup creamy peanut butter
        1 tbsp soy sauce
        1 tbsp lemon juice
        1 tsp sugar
        1/4 tsp ground ginger
        1/4 tsp garlic powder
        1/8 tsp dried cayenne pepper

      In a skillet, sauté onion in oil just until soft. Add all
      remaining ingredients, stirring well. Bring to a boil;
      simmer, uncovered, about 5 minutes, until sauce is
      thick enough to coat a spoon. Serve at once.
      Makes two cups.
