Smitty's Heartwise Lasagne

        2 baking pans
        2 boxes lasagna noodles (uncooked)
        2 quarts of your favorite
                     meatless spaghetti sauce
2 cartons skim milk ricotta cheese
6 egg whites or 1 carton eggbeaters
        2 packages grated mozzarella
                      cheese substitute
        Grated parmesan cheese
1 cup water, half cup for each pan
2 packages ground turkey (2 lb or so)
        Italian seasonings (oregano, basil,
              thyme, whatever floats your boat)

Brown and crumble ground turkey. Season with
Italian seasonings. Add to spaghetti sauce and
simmer 10-15 minutes. While it's simmering, mix
the ricotta cheese and eggs together. Turn the
      oven on the 350 degrees.

Lay out a layer of uncooked noodles in each pan.
Cover with spaghetti sauce. With a spatula, smooth
on some of the cheese mixture and sprinkle with
fake mozzarella cheese. Repeat with more noodles,
sauce and cheese until pan is full. Fill in holes with
extra sauce and sprinkle top with grated Parmesan
cheese. Add the 1/2 cup water around the sides carefully.

Put both pans in the oven and go take a walk.
(At least two miles.) If you are a slow walker,
turn the oven down to 325 degrees.

Cool one pan, cover with aluminum foil and
give to your neighbor. Eat the other. This is
good for your heat in more ways than one.

Ben and Becky with after-school snacks.
