Tortilla Skillet Diana

        1 package boneless, skinless chicken breasts
        1 package corn tortillas
        1/2 cup chopped onions
        1 cup chopped tomatoes ( about two medium)
        1 tsp oregano
        1/4 tsp red pepper or a couple of
                     chopped chili peppers
        1/2 cup grated Monterey Jack cheese
        salt and pepper oil for frying
        sour cream (optional)

      Slice chicken into thin pieces and season with
      salt, oregano and red or black pepper. Fry in
      1-2 tbsp oil. Add chopped onion and fry another
      2 or 3 minutes. Set aside.

      Cut tortilla shells into strips and fry in oil or toast
      in the oven to save calories. Add pieces of tortilla
      shell, tomatoes, pepper and more oregano to onions
      and chicken. Stir while heating up, about fire minutes.
      Add grated cheese and allow to melt without stirring.
      Serve immediately. Can be topped with sour cream.
