Coconut Mounds |
3/4 cup mashed Potatoes, unseasoned and cold (NO milk or butter added) 4 cups confectioners sugar 4 cups macaroon coconut or flaked coconut 1 1/2 tsp.vanilla 1/2 tsp. salt 1 pound simi-sweet candy coating chocolate In a large bowl, combine sugar, coconut, potatoes, salt and vanilla Line a 9x9 square pan with foil. Butter the foil Spread the coconut mixture into the pan. Cover and chill overnight. Cut into 2" rectangles. Cover and Freeze Melt Chocolate in double boiler. Dip the frozen bars into coating chocolate and place on waxed paper to harded. Store in air tight containe Tip: OR-- Roll into balls using powdered sugar to roll. Chill for 2 hours . Dip into melted chocolate |
