Alfredo Primavera Low-Fat |
12 oz. Rotini or any small dry pasta 1 bag (16 oz.) fresh or frozen broccoli, carrots and cauliflower florets., about 4 cups 1/4 cup fat-free cream cheese, softened 1 cup fat-free sour cream 2 Tbls. dried basil 2/3 cups grated Parmesan cheese ( can be fat-free) 1. Cook the pasta , following package directions. Do not add salt or oil 2. During the last 5 minutes of cooking time, add the vegetables, and cook until they are tender. Drain well in a colander. 3. Place the sour cream, cream cheese and basil in a small sauce pan over medium heat , mixing to blend with a whisk, until heated through but not boiling. 4. Fold the sauce into the hot pasta and vegetables, then fold in the Parmesan. Makes 4 servings |
