Cheddar Cheese-Chicken Casserole
3 cups cut-up cooked Chicken
3 cups cooked rice
1/2 cup chopped red bell pepperr
1 (4oz.) can chopped green chilies
2/3 cup sour cream
1 (8oz,) package mild shredded cheddar cheese

Preheat oven to 350* degrees
Combine chicken, rice, peppers, chilies, sour cream and 1 1/2 cups of cheese in a 2 qt. casserole dish.
Bake covered 25 minutes. Top with remaining 1/2 cup cheese and bake 5 more minutes
.
Tip: Use boneless chicken breast, cut up into small pieced and cook in skillet with butter until done, add a small amount of water.
