Cornbread Dressing

1 Cup finely chopped onion
1 med. green pepper- finely chopped
3 stalks celery with leaves- finely chopped
6 cups cornbread crumbs
2 cups soft breadcrumbs
1 tsp. rubbed sage (optional)
1 tsp. salt
1/4 tsp. pepper
4 eggs. lightly beaten
1 1/2 cups turkey or chicken broth

  Combine onion, green pepper, celery and water to cover in a medium sausepan. Bring ot a boil; reduce heat and simmer 10 minutes. Drain well
  Combine cooked vegetables, cornbread crumbs, soft breadcrumbs, salt and pepper; mix well.. Add eggs; stir well. Gradually add broth, stirring auntil well blended. spoon into a lightly greased  baking dish. Bake, uncovered, 400 degrees for 45 minutes or until golden brown. yeild 12 servings.
Tip: If too dry add more broth
