Easy Lasagna

1-1/2 lbs. lean ground Beef
1 onion
1 green Bell Pepper
1 can (16 oz.) diced Tomatoes
1 can Hunt's Lasagna Sauce
1/2 tsp. Oregano
1 tsp. Salt
Dash cayenne Pepper
1/2 tsp. Garlic Powder (or 1 clove of garlic-minced)
1/4 tsp. Hot Pepper seeds ( optional)

1 large carton of small-curd Cottage Cheese
1/2 cup grated Parmeasan Cheese
2 eggs, lightly beaten
1 tsp. dried Parsley
1/2 tsp. Onion powder

8 or 10 Lasagna Noodles, cooked and drained.
1 (8oz) package of Mozzarella Cheese,shredded.

In a large Skillet, cook beef, onion, clove of garlic (if using), until meat is no longer pink; drain. Add tomatoes, lasagna sauce, salt oregano, pepper seeds, pepper salt  and garlic powder if using. Simmer for 10 minutes.
Spoon 1/3 of the meat mixture on bottom of a greased 13x9" baking dish. Cover with about 3 or 4 noodles.
  Combine cottage cheese, Parmesan Cheese, egg, parsley and onion powder. Spoon 1/2 of remaining sauce over noodles and 1/2 of Cheese mixture over meat sauce and cover with another layer of Noodles. Add the rest of Meat sauce and then Cheese mixture.
  Spread Mozzarella Cheese over top. Cover with Alumn. foil.
Bake at 375 degrees for 1 hour, uncover and bake a few minutes longer until Cheese browns slightly. Wait 10 minutes before cutting and serving.
