One Great Christmas Cake |
My cake recipe (This cake is delicious!!) serves: 16 Preheat oven: 350 degrees 3-1/2 cups all purpose flour 2 tsp. baking powder 1 tsp. baking soda 1/4 tsp. salt 1/4 tsp. ginger or mace 3 large ripe bananas 1/2 cup buttermilk 1/2 (1 stick) light butter (not margarine) 1/2 cup applesauce ( important to add applesauce) 1-1/4 cups sugar 4 eggs 2 tsp. vanilla 1-1/2 cups semi-sweet chocolate chips 1 can (8oz.) crushed pineapple; drained 1/2 cup flaked coconut 1/2 cup pecans; chopped Frosting: 1 pkg. (8oz.) cream cheese--Can be low-fat or fat-free 4 Tbsp. light Butter; softened 3 cups powdered sugar 1 tsp. vanilla Coconut --optional 1 Preheat oven to 350 degrees. Grease and flour a 12-cup bundt pan. In medium bowl, combine flour, baking powder, baking soda, salt and ginger or mace. 2. In bowl, mash together bananas and buttermilk; set aside. 3. In large bowl of electric mixer on high; beat butter and sugar until light and fluffy, about 3 minutes. Add applesauce, and eggs 1 at a time, beating well after each addition. Add vanilla. 4. Reduce mixer speed to low, add flour mixture, alternating with buttermilk and bananas mixture until combined. Stir in chocolate, pineapple , coconut and nuts. 5. Spoon mixture into prepared pan.Bake on middle rack of oven until gake is golden and toothpick inserted in center comes out clean, about 60 minutes. Cool on rack 10 minutes. Insert cake onto rack and Cool completely. 6.Frosting; In a large bowl, with electric mixer on medium high, beat cream cheese and butter until light and fluffy. Add vanilla and confectioners' sugar, beat until well- combined. 7. Place cake , rounded side up on a cake plate, cover with frosting. Decorate with Pecan halves and Holly Mix sprinkles or decorations of your choice. Can cover with coconut before decorating. |
