Sweet Potato Apple Salad
4 cups cubed cooked sweet potatoes
1 can (20 oz) pineapple chunks, drained
1 package (10-1/2 oz. mini marshmallows
4 red delicious apples, chopped with peeling
1/2 cup flaked coconut
1/2 cup walnuts, chopped
1 carton (12 oz.) frozen whipped topping, thawed
3/4 cup mayonnaise or salad dressing
3 or 4 packets of artificial sweetener or 1/4 cup sugar

In a large bowl, gently toss first six ingredients. Combine whipped toppingt and mayonnaise. fole into fruit mixture. Cover and chill at least 1 hour. 32 servings.
