Ugly Duckling Cake Cake: 1 box yellow cake mix 1 small box lemon Instant Pudding 1 can fruit cocktail, including syrup 1 cup flaked coconut 4 eggs 1/2 cup firmly packed brown sugar 1/2 cup chopped nuts (optional) Butter Glaze: 1/2 cup butter or margarine 1/2 cup sugar 1/2 cup evaporated milk 1-1/3 cups coconut Blend all the CAKE ingredients except sugar and nuts, in a large mixing bowl. Beat 4 minutes at medium speed of electric mixer. Pour into greased and floured 13x9 inch pan. Sprinkle with brown sugar and nuts. Bake at 325 degrees for 45 minutes, or until cake springs back when lightly pressed and pulls away from sides of pan. Do Not Under Bake. Cool in pan for 15 minutes. Spoon hot Butter Glaze over warm cake. Serve warm or cool with whipped creqm , if desired. Butter Glaze: Combine 1/2 cup butter, 1/2 cup sugar, 1/2 cup evaporated milk in saucepan. Boil 2 minutes. Stir in 1-1/3 c;ups of coconut. |
