Zucchini Pineapple Bread sweet and very easy to make 3 eggs 2 cups sugar 2 tsp. vanilla 1/4 cup oil 1/2 cup applesauce 3 cups plain-flour 1 tsp. salt 1 tsp. baking soda 1 tsp. baking powder 1 cup crushed pineapple-undrained 1/2 cup chopped nuts 2 cups shredded zuchinni , unpeeled (can add 1 banana-mashed, tastes good also) 1. Beat first 5 ingredients until fluffy. 2. Add the zucchini 3. sift together flour, salt, baking soda, baking powder and add to mixture. 4.Stir in remaining ingredients. 5. Pour into two greased (or sprayed) loaf pans 6. bake at 350 degrees (preheated oven) for 45 minutes or until testing done. Tip: Can be baked in 3 smaller pans but for about 30-40 minutes, also I use applesauce instead of all the oil and this makes the Bread with less fat. Can be made with 3/4 cup of oil and no applesauce. I prefer the applesauce and oil. |
