Rainbow-coloured Salad

     Ingredients:

	1 cup broccoli florets 
	2 cups baby spinach leaves 
	1 cup cherry tomatoes, halved 
	1 large red bell pepper, cored, seeded, cut into thin strips 
	1 large yellow bell pepper, cored, seeded, cut into thin strips 
	1/2 cup minced mild-tasting onion or scallions 
	1/2 cup chopped basil 
	1 1/2 teaspoons olive oil 
	1/2 cup fat-free plain yogurt 
	1 tablespoon white balsamic vinegar 
	1/2 teaspoon prepared Dijon-style mustard 
	1 garlic clove, minced 
	1/2 teaspoon salt 
	1/4 teaspoon pepper 

     Preparation:
     ------------

        1.   In a large bowl, combine the broccoli, spinach, cherry tomatoes, peppers, 
             onions and basil. Toss gently.
        2.   In a cup, stir together the old, yogurt, vinegar, mustard, garlic, salf 
             and pepper.
        3.   Pour over the salad just before serving. Toss gently, but well.
