1 stick (1/2 cup) butter
4 scallions, finely chopped
6 Tbl. flour
Salt to taste
2 cups half-and-half
1/2 cup milk
1/2 cup white wine
6 chicken breast halves
1/4 pound mushrooms, stems cut off
Preheat oven to 375°F. Melt butter in a saucepan over medium-low heat. Add onions and sauté one minute. Add the flour, salt, half-and-half, milk, and wine. Cook, stirring, until thickened. Arrange chicken breasts in ovenproof dish and pour sauce over them. Bake at 375°F for 40 minutes. Layer mushrooms on top of chicken and bake an addtional 15 minutes. Serve immediately.
