Chicken with Garlic and Basil Sauce

Serves 2

2 Tbl. olive oil
2 boneless skinless chicken breast halves
Pepper to taste
Sauce:
3 Tbl. lemon juice
10-15 garlic cloves
1 cup chicken broth or water
1/2 cup fresh chopped basil or 1 1/2 tsp. dried basil
Salt and pepper to taste

Heat oil in skillet over medium heat. Sprinkle chicken with pepper to taste. Add chicken to skillet and cook through, turning occasionally, about 7 minutes, or until no longer pink inside. Transfer to platter and keep warm in 250°F oven. Add lemon juice and garlic to skillet. Stir over medium heat about 1 minute. Add chicken broth and basil. Stir occasionally over heat until garlic is soft. Add extra liquid if needed. Season with salt and pepper to taste. Pour sauce and garlic over chicken and serve.
