Serves 2
3 Tbl. butter
3 Tbl. olive oil
1 lb. shrimp, cleaned and deveined
1 tsp. crushed red pepper
1 tsp. Cajun or Creole seasoning
1/2 tsp. garlic powder
2 tsp. Italian seasoning
1/2 cup sherry
2 Tbl. cornstarch
1/2 cup water
1/2 cup Parmesan cheese
Melt butter in medium skillet over low heat. Stir in olive oil. Add shrimp and sauté until pink. Add the red pepper, Cajun or Creole seasoning, and garlic powder. Sauté for a few minutes more to allow the flavors to blend. Add the Italian seasoning and sherry. Heat until simmering. Dissolve cornstarch in water and add to skillet. Continue to cook, stirring constantly, until thickened. Add the Parmesan cheese and stir until melted. Serve hot over noodles.
Note: If too thick, add small amounts of sherry at a time until desired consistency
is reached.
