4 yellow squash
1 Tbl. butter
1/2 tsp. salt
1/2 tsp. pepper
2 eggs 1/2 cup milk
2 Tbl. flour
8 oz. sharp Cheddar cheese, shredded
6 strips bacon
1 unbaked pie shell
Preheat oven to 350°F. Chop squash into bite size pieces and place in a medium
sauce pot. Add butter, salt, pepper, and water to cover. Boil until tender.
Meanwhile, in a medium skillet, fry bacon until crisp. Set aside on a paper
towel, and when cool, chop into small pieces. When squash is done, drain water.
In a mixing bowl, whisk together eggs, milk, and flour. Add squash, cheese,
and bacon, mix to combine, and pour into pie shell. Bake about 40 minutes. Let
stand for a few minutes, and serve.
