Spanish Rice
3 slices Bacon
1/2 cup rice
1/2 cup onion sliced
1 1/4 cups tomatoes, canned undrained
1/2 teaspoon salt
1 teaspoon paprika
1 medium green pepper chopped
1 clove garlic minced
Sauté bacon until brown, then remove. Cook rice and onions in drippings
until brown. Add bacon, tomatoes, salt, paprika, green pepper, and garlic.
Steam for 1 hour, adding more water if rice becomes too dry.
