Rolled Ribs



6 pork side ribs, 1 ¼ lb. each
18 oz. bread stuffing
salt and pepper
water

Season ribs with salt and pepper. Spread stuffing on ribs. Roll ribs and fasten with tooth picks. Place ribs on sides in snug-fitting baking dish so they won't unroll. Add water halfway up ribs. Cover dish with aluminum foil. Bake in pre-heated oven at 475 degrees F. for one (1) hour, then reduce oven temperature to 325 and bake for two (2) more hours. Uncover pan to brown ribs at finish.






Bread Stuffing


1 oz. oil
½ onion, cut into small pieces
1 pieces of celery, chopped
4 oz. mushrooms, chopped
½ green pepper, chopped
salt, pepper, basil
3 oz. water
½ loaf white bread


Cut or break bread into small pieces. Using a fry-pan or saucepan, sauté onions, mushrooms, celery and green pepper in oil until soft. Season with salt, pepper and basil and add water. Pour over bread and mix in a large bowl.
