Baked Cabbage with Bacon



8 oz. bacon, diced
One 1 lb. head of cabbage, thinly sliced
1 med. leek, cleaned and sliced
1/2 cup water
1/4 cup chopped fresh parsley
1/4 cup chopped green onions
2 Tbs. butter
1 cup breadcrumbs

Preheat oven to 375 degrees.
Place bacon in a large heavy pot over medium high heat. Saute until fat begins to render and bacon begins to brown, about 10 minutes. Add cabbage and leek to the bacon and continue to saute until cabbage wilts, about 10 minutes. Add water, cover the pot, reduce the heat to medium, and simmer until cabbage is tender, about 15 minutes. Uncover, increase the heat and cook until all the liquid has evaporated. Mix in parsley and green onions. Season with salt and pepper and transfer to a 9-inch pie dish or casserole. Melt butter and add the breadcrumbs. Cook until slightly browned and sprinkle over cabbage. Bake until heated through, about 10 minutes.
