BROCCOLI SOUP

        2 Tbsp. butter                                        ¾ cup chopped celery with leaves
        ¼ cup chopped onion                           1 bunch broccoli (about 1 ½ lbs)
        2 cup beef broth                                                     cut in small pieces
        ½ tsp. Salt                                              ¼ tsp. Pepper
        1 cup milk
 

Saute celery and onion in butter until wilted, add broccoli, broth, salt and pepper.
Bring to a boil, cover and cook over medium heat until broccoli is tender, about 20 minutes.
Puree ingredients in electric blender, food mill or mixer.  Stir in milk and reheat.  Makes about 1 quart.  If too thick, add broth or milk and correct the seasoning.
