SHRIMP STUFFED ZUCCHINI
 

4  Zucchini                                             4 tbsp. Butter
1  Onion                                                 5 tbsp. Flour
½  Bellpepper                                         ¾ cup Milk
1  rib of Celery                                       Garlic Powder
1 ¼  cup Shrimp                                     Seasoned Bread Crumbs
Shredded Colby Jack Cheese
 

- Cut 4 Zucchini in half lengthwise, let boil for 30 minutes (makes 8 halves)
- Dice celery, onion & bellpepper, then sauté in 2 tbsp olive oil
- Cut Shrimp in half and add to the sautéed items.  Remove from fire when cooked and set aside.
- Drain Zucchini under cold water
- Make white sauce:  First, rinse out pan.  Then mix 3 tbsp Butter with 4 tbsp flour and add ¾ cup milk slowly while stirring.  Season with garlic powder, salt & pepper.

OR

- Use Morrison’s White Gravy (pepper gravy)
- Fold sautéed mixture in with white sauce.
- Spoon out Zucchini and season.  Stuff with shrimp stuffing, sprinkle with bread crumbs and dot with 1 tbsp melted butter.
- Broil on low (2nd rack) for 4 minutes.  Sprinkle Colby Jack cheese on top and broil for approx. 1 minute.
