SPINACH QUICHE

2 Tbsp. Parmesan cheese                         3 Tbsp. onion
¼ cup butter                                             3 Tbsp. flour
Dash of salt and pepper                            1 cup half & half
4 eggs                                                       1 pkg. Creamed spinach
1 cup chopped ham                                   1 cup Swiss cheese
1 pie shell (9 or 10 inch)

Pat Parmesan cheese on bottom of pie shell.
Melt butter and add to remaining ingredients.
Mix well and pour into pastry shell.
Bake at 375 degrees about 25-35 minutes or until knife inserted comes out clean.
Serve hot.
