Beef and Pork

Oh, come on!   You try to find decent looking meat graphics! I even had to make the bars. Besides, you're here for the recipes, right? So when you stop tittering, try these - the stroganoff is one I make for my honey when I want to get on his good side!

HAMBURGER STROGANOFF
1 lb. ground beef
1 medium onion, chopped
2 cloves garlic, minced
1 tsp. each salt and pepper
2 tbsp. flour
1-8 oz. can tomato sauce
1 cup sour cream
hot cooked egg noodles
Brown beef and onion. Add garlic, salt and pepper and stir in flour. Pour in tomato sauce and simmer five minutes. Stir in sour cream and heat for a few minutes. Serve over noodles.

BEEF AND SPINACH ENCHILADAS
1 lb. lean ground beef
2 garlic cloves, minced
1-1/2 cup frozen chopped spinach
4 oz. cream cheese, cubed
1/2 tsp. cumin
2 cups shredded mozzarella cheese
8 small flour tortillas (8")
1-8 oz. can tomato sauce
1 cup mild salsa
2 tbsp. chopped cilantro (optional)
Heat oven to 350°F. Spray a 9"x13" baking dish with cooking spray (or wipe with oiled paper towel). In large skillet, cook ground beef and garlic. Drain.
Meanwhile, microwave frozen spinach until thawed (about 6 minutes on high) and squeeze out excess water. Add spinach to beef and mix well. Reduce heat to medium and add cream cheese, cumin and 1-1/2 cups mozzarella. Stir until cheeses are melted.
Spoon 1/3 cup mixture along centre of each tortilla. Roll and place in dish seam side down. Combine tomato and salsa. Spoon over tortillas. Sprinkle with remaining cheese. Bake 20-25 minutes. Sprinkle with cilantro.

COUNTRY PORK WITH APPLES
2 tbsp. butter or margarine
1-1/2 lb pork tenderloin, sliced
1 onion, chopped
1-1/2 cups chopped celery
1 apple, peeled, cored, sliced thin
2 cloves garlic, chopped
1/2 tsp. salt
1/4 tsp. pepper
1 tsp. dried thyme
2/3 cup apple juice or cider
1 tbsp. flour
1/2 cup real whipping cream
Preheat oven to 350°F. Melt butter in skillet over medium-high heat. Add pork and cook 1-2 minutes on each side until browned. Place in baking dish (9"x13") and set aside. In same skillet on medium heat, add onion, celery and apple and cook 2-3 minutes. Add garlic and seasonings and cook 2-3 minutes more.
In small bowl, whisk flour with a bit of cider to form a thin paste. Stir rest of cider, cream and paste mixture into skillet. Bring to a boil, then simmer to reduce sauce to desired thickness. Pour over pork and bake 20-25 minutes. Serve over rice.

PORK AND KRAUT SUPPER
6 pork chops, 1/2" thick
2 tbsp. oil
1 medium onion, sliced in rings
2-16 oz. cans good sauerkraut
2 red apples, cut in wedges
2 tbsp. brown sugar
1 tsp. caraway seed
1-1/2 cups apple juice
1/8 tsp. pepper
paprika
Heat oven to 350°F. In large skillet, brown pork chops in oil, remove from skillet. Cook and stir onion in drippings until tender. In ungreased 9"x13" baking dish, combine sauerkraut, apples, brown sugar, caraway seed, apple juice and cooked onions; mix well. Place pork chops in sauerkraut mixture; sprinkle with pepper and paprika. Cover with foil. Bake 1-1/2 hours or until pork chops are tender.
