Soups and Stews

I was attempting to make a short rib recipe awhile back, and it was not working out well at all. Finally, I said " forget it" and decided to cut the meat from the bones, throw the whole mess in a pot and make a gravy for it. Thus, was born Accidental Beef Stew. I love it, and I'm not even a big stew fan. Definitely worth a try!

P.E.I. POTATO SOUP
1/4 cup butter
4 medium potatoes, diced
3 cups water
3 tbsp. flour
1/4 cup finely chopped parsley
1 large onion, diced
6 carrots, diced
2 chicken bouillon packets
3 cups milk
1 tsp. dried thyme
Melt butter in large stock pot. Add onion and cook over medium heat until onion is transparent. Meanwhile, place potatoes, carrots, water and bouillon in another large pot and boil. Cook until tender. Season with pepper. Add flour to onions to make a paste. Add milk gradually, mix well and cook over low heat until warmed. Add vegetables and liquid. Stir and heat 5-10 minutes, stirring occasionally until slightly thickened. Add parsley and thyme. Heat and serve.

ACCIDENTAL BEEF STEW
1-1/2 lbs. stew beef
2 stalks celery, sliced
1/2 eggplant, peeled and cubed
1 cup baby carrots
3/4 cup flour
1 tsp pepper
1 tsp. thyme
1 tsp. marjoram
1 zucchini, scrubbed and sliced
1/2 lb. mushrooms, quartered
4 small potatoes, scrubbed & quartered
1 tbsp. vegetable oil
2 cups beef broth
1 tsp. savory
2 tbsp. cornstarch
Combine flour, salt and pepper in plastic bag, add beef and shake to coat. Heat oil in large skillet with lid over medium-high heat. Add meat and brown quickly. Add just enough broth to cover meat, add seasonings, cover and simmer for one hour. Place mushrooms in bowl and microwave on high 2-3 minutes. Add to meat mixture with rest of veggies and simmer 1/2 hour longer. Add more broth if necessary. Mix cornstarch with a little water or broth until smooth and add to mixture. Heat a few minutes longer, stirring constantly, until sauce is thickened. Serve with fresh bread.
