I was a bit lazy (or should I say BUSY, LOL) to create printer-friendly versions.  If you'd like to print out a recipe, highlight it, then copy and paste it to a Word doc, or even to your email, and print from there  :)

 

 

Snowball Cookies

Ingredients

1 c Butter or margarine
1/2 c Sugar, powdered; sifted
1 teaspoon Vanilla
2 1/2 c Flour; sifted
1/4 teaspoon Salt
3/4 c Pecans, chopped
Cream butter in large bowl.  Add sugar, cream until light.  Stir in vanilla.  Sift flour and salt; mix in.  Stir in nuts.  Shape into balls.  Place on ungreased cookie sheet. Bake 15 minutes at 350.  Roll in powdered sugar straight out of oven. Roll again when cool.

Makes about 36 cookies.

 

 

Holiday Appetillas

Other than the chopping...kids can help make this up...with the RED and GREEN peppers...it looks very much like Christmas!

Ingredients

1 pk Flour Tortillas
16 oz Cream cheese; softened
1/4 c Green Olives; chopped
1/2 c Green onion; chopped
1/2 c Red Pepper; chopped
1/2 c Green Pepper; chopped
1/4 c Mayonnaise (or Miracle Whip)
1/2 ts Garlic Salt
1/2 ts Red Pepper flakes, crushed

Mix together all ingredients, except for the tortillas. Spread cream cheese mixture evenly over all the tortillas.  Tightly roll up flour tortillas.  Wrap individually in plastic wrap.  Refrigerate at least 3 hours or overnight.  Cut in 3/4" diagonal slices.  Serve with salsa.

Yield: 10 Tortillas

 

 

Peanut Butter Graham Cracker Bears

Kids will enjoy helping make the bear shapes!

Ingredients

1/2 cup peanut butter
1/4 cup margarine or butter
1/4 cup shortening
2/3 cup granulated sugar
1/4 cup packed brown sugar
3/4 teaspoon baking soda
1 egg
1/2 teaspoon vanilla
1 cup all-purpose flour
1/2 cup finely crushed graham crackers (7 cracker squares)
Miniature semisweet chocolate pieces
Frosting (optional)
Beat peanut butter, margarine or butter, and shortening in a large mixing bowl with an electric mixer on medium to high speed for 30 seconds.  Add granulated sugar, brown sugar, and baking soda; beat till combined.  Beat in egg and vanilla.  Beat in as much of the flour and cracker crumbs as you can with the mixer on medium speed, scraping sides of bowl occasionally. Stir in any remaining flour and crumbs with a wooden spoon.

For each bear cookie, shape some of the dough into on 1 1/4 inch ball (for body), one 3/4 inch ball (for head), three balls slightly smaller than 1/4 inch (for nose and ears), two 1 1/2 x 1/2 inch logs (for arms), and two 1 1/4 x 3/4 inch logs (for legs).

Decorate bears before baking by pressing in chocolate pieces for eyes and paws.

Bake in a 325 degree oven for 15 to 18 minutes or till edges are lightly browned.

Makes about 20.

 

 

Mulled Wine for Kids

Ingredients

2 Litres non-alcoholic grape juice
2 cups water
1 cup sugar
2 dozen whole cloves
4 cinnamon sticks
The peel of 1 orange and 1 lemon
1crushed nutmeg
2½ cups of hot lemon/lime juice

Heat the water and add the sugar, cloves, cinnamon, nutmeg and peel.  Boil for 5 minutes and leave to simmer for 5 more.  Strain this syrup into a large pot and add the citrus juice, heat until it is gently bubbling.  Add the 2 litres of grape juice and keep the mixture on a low heat, serve with a slice of lemon.

 

Hidden Treasure Cookies

Use an assortment of candy centers so that each cookie contains a different candy treasure.

Ingredients

3/4 cup margarine or butter
1/2 cup sugar
1/4 teaspoon baking powder
1 egg yolk
1/2 teaspoon vanilla
1/4 teaspoon almond extract (optional)
1 3/4 cups all-purpose flour

Small candies (small gumdrops, jelly beans, candy-coated chocolate and peanut butter pieces
Brightly colored sugar or small multicolor decorative candies

Beat margarine or butter in a large mixing bowl with an electric mixer on medium to high speed for 30 seconds.  Add the sugar and baking powder and beat till combined.  Beat in egg yolk, vanilla, and almond extract, if desired, till combined.  Beat in as much of the flour as you can with the mixer on medium speed, scraping sides of bowl occasionally. Stir in any remaining flour with a wooden spoon. Do not chill dough.

Shape a rounded teaspoon of dough around a small candy.  Roll in colored sugar or decorative candies.  Place cookies 2" apart on a greased cookie sheet.

Bake in a 375 degree oven for 8 to 10 minutes or till edges are firm but not brown.  Cool cookies on a wire rack.

Makes about 30.

 

 

Very Rocky Road Fudge

This is a microwave recipe

Ingredients

1 1/2 Cups sugar
2 cups miniature marshmallows
1 5-ounce can evaporated milk
1/4 cup margarine or butter
1 12-ounce package semisweet chocolate pieces
1 teaspoon vanilla extract
1 10 to 12-ounce can mixed nuts
In 2-quart glass measure, cook sugar, 1 cup marshmallows, milk, and margarine on High for four and a half to six and a half minutes until melted, stirring once during cooking. Stir; cook for another one and a half minutes.  Stir in chocolate and vanilla until smooth. Fold in nuts and remaining marshmallows.  Spread in foil-lined 8" by 8" baking pan.

Refrigerate until firm. Cut into 24 pieces.
