SPANISH RICE |
150ml uncooked regular rice 300ml water 2 ml salt 10 ml margerine 4 strips of bacon-DICED 1/2 medium onion-DICED 1/2 green pepper-DICED 1 stalk of celery-diced 200ml tomato sauce 10ml chili powder f.g. salt and pepper 100 ml cheddar cheese - grated (cheese is for later) Method 1. In a small sauce pan, combine rice, water salt and margarine. bring to a boil. 2. Turn the temperature down as low as possible, cover the pan and cook the rice for 20 min. without lifting the lid or stirring. 3. While rice is cooking, wash and dice the veggies. Put to one side in a dish. 4. Cut bacon into small pieces, and cook in a large frying pan over medium heat. 5. When bacon has been cooking for ~ 2 min., add veggies to pan and cook until the veggies are bright in colour, onion is translucent and the bacon is crisp. 6. Add the cooked rice to the mixture. Mix well. 7. Measure the tomato sauce and add the spices to the sauce. Stir into rice mixture, and cook until heated through. 8. Serve hot, topped with grated cheese. |
