Garlic Chilli Chicken
Masala

A very hot curry, but does have a certain place in the heart. and is mighty tasty! |
Ingredients
|
2 fresh tomatoes
|
chopped
|
10 fresh chillies
|
5 chopped - 5 whole
|
1 whole chicken breast
fillet
|
diced into your favourite shapes
|
1 large onion
|
coarsely chopped |
1 Red Capsicum
|
sliced
|
5 garlic cloves
|
chopped |
1/2 inch block of ginger
|
chopped
|
1 tblsp fresh coriander leaves |
finely chopped
|
1 tblsp curry powder |
Hot |
1 tblsp Tandoori powder |
|
1/2 fresh lime
|
juiced
|
2 teasp cumin seeds
|
optional |
2 teasp black
mustard seeds
|
optional |
4 cloves |
|
Pinch of salt
|
to taste. |
4 tablespoons ghee /
olive oil
|
|
Tips. Vegetarians, use your favourite selection of veggies instead of the chicken. Mushrooms and new potatoes are great in this one. |
Method
|
i) Mix the curry and tandoori powder with just enough water to make a paste ii) Heat the oil in the wok ( medium / hot ) and fry the garlic, ginger, cumin and mustard seeds for 1 mins iii) Add the curry paste and stir fry for a further 2-3 mins, stirring constantly iv) Add the onion, tomato, cloves and the chopped chilli, stir fry for 3 mins v) Put this in a blender and make a smooth sauce vi) Stir fry the chicken in what's left in the wok for 5 mins vii) Add the capsicum, remaining whole chilli and Stir fry for 5 mins viii) Add then sauce and heat gently for 10 mins vii) Add the coriander and serve with rice and / or nann |
