Chilli Concarne
Serves 4

Classic Mexican Dish.

Ingredients
4 fresh tomatoes
in the blender
5 - 10 fresh jalapeno chillies
 in the blender
600g Mince Beef
 
1 large onion
chopped

1 tin of red kidney beans

rinsed 
2 garlic cloves
in the blender

1 tblsp fresh coriander leaves

chopped

2 tblsp Mexican chilli powder

 

1 teasp salt 

 

3 tablespoons olive oil

1 lime
juice of

Tips.
To make the dish hotter, then use smaller chillies like cayenne's instead of the jalapenos 

Vegetarians, use your favourite selection of veggies instead of the Beef. Courgettes, sweet corn, mushrooms always go down a treat and potatoes are great too. If fact, you can use a right medley with this one.

Method

i)    Heat the half the oil in the wok ( medium / hot ) and fry the mince until browned

ii)   Pour off excess fat, then add the rest of the oil and the onions. Fry for a further 5 mins 

iii)   In the mean time, turn on the blender and make a smooth paste ( adding water or beer if necessary )

iv)   Add the paste to the wok, with the kidney beans, Mexican chilli powder and salt

v)    Cook for a further 30 mins or so, until it looks yummy, adding water or beer if it gets too thick

vi)   Add the coriander leaves and lime juice and Serve with rice
