Beef Vindaloo
Serves 4

Ingredients
1 fresh plumb tomato
in the blender!
5 fresh jalapeno chillies
in the blender!
1 tblsp fresh coriander leaves
in the blender!
5 garlic cloves
in the blender!
1 cup of red wine
poured
600g diced beef
 

6 small new potatoes 

halved

1 large onion

coarsely chopped

5 fresh cayenne chillies

chopped 
5 garlic cloves

 

2 teasp ground cardamoms 

 

10 cloves 

 

2 teasp cinnamon

 

3 tablespoons olive oil

Vegetarians, use your favourite selection of veggies instead of the Beef. Courgettes, sweet corn, mushrooms always go down a treat and potatoes are great too. If fact, you can use a right medley with this one.

Method

i)     Turn on the blender and mix to a smooth sauce 

ii)    Mix the beef, potatoes and red wine with the sauce and marinate in the fridge overnight 

iii)   Heat the oil in the wok ( medium ) and stir fry the cloves, cardamoms, cinnamon and the remaining chillies and garlic for 2 mins, then add the onion and stir fry for a further 5 mins.

iv)   Mix the stir fry with the marinade and put it into a casserole dish and bake at about 200 f until the potatoes are nice and soft ( about an hour... ? ). 

v)    Serve with rice and / or nann
