Next to sewing, our favorite pasttime is eating and these two meet often in our guild. We have refreshments at our monthly
meetings, cover-dish suppers for our Christmas and Year-end celebrations and buffet-style feasts during our quilt weekends.
As fantastic new recipes are introduced, everyone always wants a copy. Here are some of our favorite recipes.

Great Pumpkin Spice Bars
Preheat oven to 350 degrees F. Lightly coat 13x9 inch pan with vegetable cooking spray. Combine flour, cinnamon, baking powder, baking soda, ginger,
salt and pepper in a bowl. Whisk egg and granulated sugar in another bowl. Whisk in pumpkin, oil and vanilla until smooth. Stir in pineapple, then dry ingredients,
until just blended. Stir in raisins. Spread batter in prepared pan. bake 33 to 35 min., until toothpick inserted in center comes out clean. Cool in pan
on wire rack. Whisk all icing ingredients in bowl until smooth. Spread top with icing. Let stand 1 hour. Cut into 24-3x1 1/2 inch bars.
Pumpkin Streusel Squares
Preheat oven to 350 degrees F. Combine flour & sugars in med. bowl. Cut in butter/marg. until crumbly. Stir in nuts. Reserve 1 c crumb mixture. Press remainder firmly on bottom
and half way up the sides of a 12x7 inch baking pan. Combine remaining ingredients in lg. bowl. Mix well. Pour into prepared dish. Top with reserved crumb mixture. Bake. Cool. Service with ice cream,
if desired. Refrigerate.

Combine: 8 oz of cream cheese - softened, 3/4 c. mayo, 2 T minced onion, 1 t drained horseradish, 1 t worcestershire sauce and 1/4 salt.
Fold in 1-6 oz can crabmeat - drained. If desired, sprinkle with slivered almonds. Bake at 350 degrees until heated through - about 25 minutes.
Serve with crackers.
Stretch 1 lb of pizza dough in to an oval as large as you can. Sprinkle with 2 boxes of fronzen spinach - drained, and 2-8 oz
packages of mozzarella cheese. Roll up like a jelly roll and pinch ends to close. Bake 350 degrees 45-60 minutes til dough is cooked in middle.
Serve warm with sauce if desired. Can substitute spinach and mozzarella for broccoli, ham, pepperoni, sausage, ... whatever you like.
Cook 3/4 c. barley (10 minutes quick). Drain. While it is still warm, add 1/2 c. Italian dressing.
Add 1/2 carrot, grated and 1/2 each of red and green peppers, diced and 1/2 stalk celery, chopped fine.
Refrigerate until cold and stir in 2 heaping T of mayo.
Cut 1 large eggplant into 1/2 inch slices. Dip pieces in milk, dredge in flour with salt and pepper mixed in. Next coat with bread crumbs.
Placeon oiled cookie sheet and bake at 350 degrees until lightly browned. Tranfer to casserol dish coated with sauce. Layer eggplant, sauce,
and Parmasan cheese. Place in oven til sauce bubbles and cheese is melted.
Combine peppers - assorted colors, capers, rignoli, black olives, grated cheese, bread crumbs and enough olive oil to coat.
Bake uncovered in oven for 45 minutes on 450 degrees.

1 can (8 oz.) crushed pineapple in juice
1/2 c raisinsIcing
3/4 c confectioners' sugar
3 to 4 t low-fat (1%) milk
1/4 t grated orange peel
1/4 t vanilla extract

1 c cold butter/margarine
-cut into sm pieces
2 c pumpkin (1-16 oz can)
1 c chopped nuts
1 can (14 oz)sweetened condensed milk
2 eggs
1 t cinnamon

1/2 t salt
