Vegan Potato and Herb Soup
Serves 2 to 3 people

Ingredients:

- 1 1/2 tablespoons of soy/non animal product Margarine

- 1 onion, peeled and chopped

- 5 medium sized potatoes - peeled and cut into small cubes

- 1 litre of vegetable stock

- 2 tablespoons of parsley

- 2 tablespoons of chives

Method:

Melt the margarine in a large saucepan. Add the onion and give it a stir. Cover the pan and leave it on a low heat for about 2 mins. Add the potatoes, stir well, cover and cook over a medium heat for about 5 to 10 minutes.

Pour in the stock and bring it to the boil, then reduce the heat, cover the pan and leave to simmer until the potatoes are tender; this should take about 10 to 15 minutes.

Pour the soup into a blender or food processor and mix it up until it has a smooth texture. Pour the soup back into the pan and add the parsley and chives. Give a good stir so the herbs are mixed in well. Season to tast with salt and pepper.

Serve with wholemeal bread and enjoy! This one is bliss in winter!
