Here are a few recipes that are either sugar-free or so low in calories that they can be eaten by diabetics or those that just want to watch their calories |

Sugar-Free Apple Pie |
Peel-core and slice thin enough apples to make 3-4 cups (about 6 apples) I prefer Granny Smith apples Put into a large mixing bowl and add 3/4 C. Equal Spoonable 1/4 C. SugarTwin Brown Sugar substitute 3 slightly rounded TBSP cornstarch 1 tsp cinnomon (I also add a dash of nutmeg) toss all of this together well Add 3 tbsp of lemon juice (I usually add about an equal amount of water) stir this into mixture then pour apple mixture in a 9' unbaked deepdish pieshell wet edges of crust with water and then add top crust and crimp together. Brush crust with milk then cover rim with aluminum foil (for even browning and no burning) Place on cookie sheet in middle of medium heat oven (375*) and bake 45 min to 1 hour |
Sugar-Free Pumpkin Cheese Pie |

This recipe is cooked entirely in the microwave |
1 1/4 cups graham cracker crumbs 1/3 C. unsalted melted margarine 8 oz. softened cream cheese (lo-fat will reduce calories even more) 1/2 C. pumpkin 17 packets sugar substitute 2 eggs, or 1/2 cup low-cholestrol egg substitute 1 tsp. vanilla 1 tsp. cinnamon 1/2 tsp. nutmeg 12 packs sugar substitute 1 C. water 2 drops red food coloring 1 Tbsp cornstarch 2 tsp. lemon juice 2 C. fresh cranberries. In a small bowl, combine graham cracker crumbs and margarine. Press into botom and sides of a 9" glass pie plate In a bowl, combine cream cheese, pumpkin, 16 packets sugar substitute, eggs (or egg substitute), vanilla, cinnamon and nutmeg. Beat until smooth. Microwave on high for 3-5 minutes until hot but not set. Stir frequently. Pour into pie shell. Microwave on high for 5 to 7 minutes or until knife inserted comes out clean. Sprinkle one packet of sugar substitute over top. To make topping, mix remaining ingredients EXCEPT berries in a 1-quart glass container. Stir well. Cover with plastic wrap and microwave on high for 3-4 minutes stiring often, until thick. Add berries and microwave on high for 3-4 minutes longer or until skins pop. Pour over pie. Chill Serves 8 1/8 pie per serving. Renal & Renal Diabetic Exchanges: 1 medium Potassium fruit 3 fat calories-220 carbohydrates-11 protein-4 fat-18 sodium-176 potassium-141 phosphours-58 (less calories if no-fat and egg substitute are used) |
