Zahdé's Beef Heart Paprikash

This was inspired by is my dad's recipe for Hungarian Goulash and my friend Kaaren's recipe for Chicken Paprikash. There are not many recipes out there for beef heart, and most of them involve stuffing it and roasting it. The store where I bought my beef heart had already sliced it into cutlets so roasting wasn't an option. When Kaaren asked me if beef heart was anything like chicken heart I thought of the chicken giblets she puts in her Paprikash.

Spread a little oil on the bottom of a heavy stew pot. Coarsely chop the onions and cover the bottom of the pot. Put the cubed beef heart on top of the onions. Sprinkle on the spices. Cover and cook on low (If you cook it too hot the meat will harden.). Stir occasionally. Don't take the lid off very often, all the sauce comes from the onions dissolving.

While the meat is cooking, make the egg noodles.

When the meat is cooked stir in the noodles and let sit for 5 min, then serve.
